Tina & Adam's Recipe for their Maw Maw Irma Melerine's Shrimp Salad
I never had a recipe for this Shrimp Salad. I've just watched my Mom make it since I was little, just like she watched her own mother make it since she was little too. I have added a few extra things to the way my mom had told me how to make it. Now, Adam knows how to make it too! I'm sure one day he will add his own "Flavor" to one of my all time favorite family recipes. Adam never got to meet my Maw Maw Irma, but I know she's always watching over us! Really! Adam says he see's her spirit in our house,in the kitchen! *Goosebumps*
2 pounds of peeled and deveined shrimp
4 boiled eggs
1 tablespoon of fresh parsley
1 cup of Blue Plate Mayo (This is my fav! You can use your favorite Mayo!)
1 cup of Blue Plate Sandwich Spread (I got a thing for Blue Plate, It's the NOLA girl in me!)
1 teaspoon of mustard
1 Sweet Gherkin Pickle (Don't like Pickles? Then don't add this little baby. We know Nadia G likes them! You would know that if you had her first BK cookbook. :P )
Salt, pepper, onion powder, garlic powder, Old Bay Seasoning and paprika to taste.
*For a little extra "Kick"-add Cayenne Pepper to taste!
Peel and de-vein shrimp. Fill a large pot halfway with water, bring to a boil and add some salt and 1 Tablespoon of liquid crab boil. Boil shrimp 6-8 minutes, then take off heat and let soak 2 more minutes for more spice. Strain the water out and let cool down. (You can get steamed shrimp,but you will need about 2 1/2 pounds at least because you will have to peel them.)
Bring another pot of water to a boil and add the eggs and sprinkle salt over all the eggs. Boil 10-15 minutes. Take out of the water and let them cool down and peel them.
In a food processsor add the shrimp. Turn on for about 5 seconds, mix it up and turn on for 5 more seconds. Place shrimp in a large bowl. Now place the eggs in the food processor and turn on for about 3 seconds. If you want the eggs more fine then do it 3 more seconds. Place in the bowl with the shrimp.
Add the mayo, sandwich spread, mustard and all the spices. PS: I'm kinda obsessed with Mynaz (Mayonaise) so you might want to start with less and add more if you need it. ;) I don't measure spices, so just add the spices a little at time, mix well and taste. If you need a little more than add more! You can add the chopped parsley and finely chopped sweet gerkin pickles if you like more pickles in your shrimp salad. (There are some pickles in the sandwich spread already.) Mix it really good!
You can sprinkle some paprika on the top to garnish. You can serve this as an appetizer on crackers or make sandwiches!
Tastes even better the next day, so make it the day before you plan on serving.

PS BKcrew: Maw Maw Irma use to make some amazing Pralines too! Guess what? I make them too. Adam always says "Nadia G loves brown sugar!" Pralines in the background for dessert with the Shrimp Salad would look pretty good in the cookbook! ;) You gotta pick us to get "Dat" recipe! lol
